Today we’re making Loaded Sweet Potato Nachos.
This recipe is intended for spicy food lovers, but if you don’t like spicy–you can simply remove the cayenne pepper, chili powder, jalapenos and substitute with more herb spices.

Ingredients:
2 skinless chicken breast 2 large sweet potatoes ½ cup diced onions 1 tablespoon olive oil or cooking spray ¼ teaspoon Kosher salt ¼ teaspoon pepper 2 teaspoon cayenne pepper 2 teaspoon chili powder 1 teaspoon garlic powder 1 teaspoon oregano ¼ cup diced jalapeño (optional) 1 cup low-fat cheddar cheese or cheese alternative 1 mashed avocado Green onion, for garnish Pico de Gallo, for garnish
Preparation:
- Preheat your oven to 400F/200C.
- Slice the sweet potatoes into thin rounds.

Sweet potatoes cut into thin rounds - Lay the sweet potato rounds on a parchment-lined or aluminum-lined baking sheet. Season with garlic powder, oregano, salt, pepper, and drizzle olive oil (or cooking spray). Toss around as well to make sure all the rounds are seasoned.
- Pop those babies in the oven and roast for 15-20 minutes. Flip them at 7 minutes.
- Season the chicken breasts with chili powder, cayenne pepper, oregano, garlic powder, salt, and pepper. If breasts are thick, slice them in half so they cook more quickly.
- Next, spray a large-sized pan with cooking spray. Grill the chicken on medium for about 7-10 minutes on each side.
- Take the sweet potatoes out of the oven and let cool.
- Once the chicken is thoroughly cooked, dice chicken into small cubes.
- Top sweet potatoes with diced chicken, onions, jalapenos, and cheese. Broil for about 5-7 minutes or until cheese is melted.
- Garnish with green onion. Serve with avocado, pico de gallo. Serve immediately.
- If you are tracking calories or macros, keep the desired amount of sweet potatoes on the baking sheet and set aside the rest (step 7). Then, add the desired amount of chicken, jalapenos, and cheese and broil for 5-7 minutes (step 9). Garnish with the desired amount of green onion, along with mashed avocado, pica de gallo (step 10). Store the rest of the sweet potatoes and chicken for later or let the family enjoy as well.
